We need plenty of suns so the plant can perform photosynthesis and the berries can be able to develop a lot of fruit sugars in them. But be aware that the plant probably needs more water then too.

The color of the berry should be really dark deep red. This indicated fully ripened. But it needs to have this color all through it, instead of just the half or bottom part. The strawberry more or less ripens from the tip all the way up to where it connects to the rest of the plant.

If you have picked strawberries that are unripe then the best thing you can do is to use them in compost. This will turn them back into the soil and become a healthy fertilizer for future places in your garden.

But if you are into more acidic food then using these unripe strawberries in a salad is a great option. They have a bright acidity and sweetness. Slice them really thinly and they will be a great addition to a fresh garden salad.

Just add some balsamic vinegar and you are good to go. This is a great way of not wasting any berries from your plants. A lot of energy has been used in order to produce these anyway.
